1 cup zucchini
2 eggs + 1 egg white
1 cup apple sauce (unsweetened)
2 cups sugar
3 tsp vanilla
1 Tbsp oil

2 cups flour
1/4 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
3 tsp cinamon

Peel and shred Zucchini. (needs to be 1 cup after the
zucchini is peeled and shredded)
Spray pans with cooking spray and flour pans.
Mix zucchini, eggs, apple sauce, sugar, vanilla, and oil.
in a medium/large bowl.
Add the rest and mix well.
Form into 2 loaves of zucchini bread.
Batter will be thin. Bake at 350 degrees for 50-60 minutes.

This recipe makes 2 zucchini bread loaves.
Freezes well too!

This zucchini bread recipe does not have a "zucchini" taste to it.
It is more sweet with a cinamon twist to it. So don't be worried that
the kids won't like. My children beg me to make this zucchini bread recipe.
