1 TBSP Olive Oil
1 Medium Onion (diced)
1 Clove Garlic (minced)
4 Large Tomatoes (diced)
4 Large Sprigs of Thyme
1/3 cup vodka
1/2 tsp Salt
1/8 tsp white pepper
3 TBSP Heavy Cream

Saute garlic and onion in olive oil stirring often.
Add tomatoes, thyme, vodka, salt, and pepper.
Increase heat to high and bring to a boil.
Now reduce heat to medium low.
Simmer uncovered for about 14-15 minutes.
Stir in cream until warm. (do not boil)
Serve over prepared pasta.
