1 lb London Broil* (visible fat trimmed)
3 Medium Potatoes (skin removed)
5 Whole carrots (peeled)
2 cans diced tomato
1 large white or yellow onion
1 can corn (drained)
48 oz can vegetable juice*
pepper to taste
Prepare (chop) beef, potato, carrot, tomato, and onion
into bite size pieces.
Put the vegetable beef soup into crock pot.
Stir and cover.
Cook the vegetable beef soup on high for 4 hours or
low for 8 hours.
*To spice it up, I use spicy V-8 juice in my vegetable beef soup.
This is a great easy homemade recipe for those working parents. Prepare this recipe the night before and put it in the fridge. Then, in the morning, put it in the crock pot on low for 8 hours and enjoy when you get home.
