Fish Seasoning
Mesquite Wood Chunks*
Water
Charcoal
Lighter Fluid
Put charcoal in bottom of smoker.
Add lighter fluid and light.
Rub fish seasoning into salmon.
Meanwhile, soak wood chunks in bowl filled with water.
When flames die down, add water to next level bowl in smoker.
Spray top rack with cooking spray.
Place Salmon on top rack.
Cover with lid.
Open bottom door and throw in approximately 7 wood chunks.*
Cook for 3 - 3 1/2 hours.
During cooking time continue adding charcoal, wood chunks, and water to smoker as needed checking every 45 minutes.
*For the best ultimate Smoked Salmon flavor, it is very important to periodically add wood chunks to the smoker.
