4 Skinless Boneless Chicken Breast Halves
Juice of half of a Lemon
1/4 Cup Light Margarine
1/4 Cup Dijon Mustard
1/2 Cup Fine Dry Breadcrumbs
Preheat the oven to 425 degrees.
Rinse off the chicken and lay in a foil lined shallow baking pan.
Squeeze the lemon juice on both sides of the chicken.
Season each side of the chicken with salt and pepper.
Melt the butter in the microwave and brush over the chicken.
Place the chicken in the oven for 20 minutes, turning twice during
baking time.
Remove from the oven.
On the flat side of the chicken, spread a layer of dijon mustard.
Then turn, with mustard side down, into the bowl containg the
bread crumbs, putting a thin layer of crumbs over the mustard side.
Place the mustard chicken back in the pan and repeat with the
other pieces.
Drizzle about 2 TBSP of butter evenly over the crumb side of the chicken.
Put the recipe in the preheated oven, turning onto broil, about 7 inches from the heat source. Broil until the crumbs are golden brown, watching carefully that you do not burn them.
The nice thing about this recipe is that it does not take a lot of ingredients.
