1/4 Cup Light Sour Cream
1/4 Cup Fat Free Sour Cream
1/4 Cup Fat Free Mayonaise
1/2 Cup Salsa (divided)
10 Fat Free Flour Tortillas
1 lb Leftover Roast Beef
Lettuce
Combine the light sour cream, fat free sour cream, mayonaise,
and half of the salsa in a mixing bowl.
Mix well.
Spread the mixture over each fat free tortilla.
Thinly slice the leftover roast beef.
Put the roast beef on top of each tortilla in equal amounts.
Add the lettuce.
Roll each tortilla up and cut in half at an angle.
Serve the remaining salsa in a small dip bowl on each plate.
Another thing you can do with this leftover roast beef recipe is
cut them in many slices to serve as an appetizer. And, for a
prettier look, at some chopped tomato. If adding tomato though,
make sure after you chop them, you pat them dry with paper
towel. Tomatoes are very wet and will make the tortillas soggy if you skip this step.
