7 slices center cut bacon
1 (10 ounce) package frozen chopped spinach
1/2 cup salsa
4 ounces fat free cream cheese
4 ounces reduced fat cream cheese
1/3 cup chopped green onions
1 cup diced tomatoes
1/2 cup shredded part skim mozzarella cheese
1/4 tsp ground cumin
1/4 tsp salt
1/4 tsp ground black pepper
1/4 tsp garlic powder
Thaw and drain the spinach.
Set aside.
Place bacon in a large, deep skillet.
Cook over medium high heat until evenly brown.
Drain, crumble and set aside.
In a medium saucepan cook and stir in the spinach, salsa, cream
cheese and green onions until the cream cheese has melted.
Stir in the crumbled bacon and tomatoes.
Remove from heat.
Stir in the mozzarella cheese, cumin, salt, pepper and garlic powder.
Serve with baked pita triangles or baked tortilla chips.
