Ground Beef Enchiladas Recipe
1 lb Ground Beef
3 Green Onions (chopped)
2 Cloves Garlic (minced)
1 - 10.75 oz Reduced Fat Cream of Chicken Soup
1 - 4 oz Can Diced Green Chiles
1/2 Cup Light Sour Cream
1 1/2 Cups
1 1/2 Cups Shredded 2% Sharp Cheddar Cheese
6 Fat Free Flour Tortillas
1/4 Cup 1% Milk
1/2 tsp Chili Powder
Preheat oven to 350 degrees.
Prepare ground beef and set aside.
Spray baking dish with cooking spray.
Set aside.
Lightly spray a pan with cooking spray.
Place chopped green onions and minced garlic in pan.
Cook for a few minutes.
Add cream of chicken soup, green chiles, and sour cream.
Stir well.
Divide the sauce in half.
Set aside half of the sauce and keep other half in pan.
Add the ground beef and 3/4 cup shredded cheddar cheese
to pan.
Mix well.
Lay each tortilla on the counter and fill with ground beef
mixture. (about 2 heaping spoonfuls each). Divide evenly.
Roll each tortilla starting at the end with the ground beef mixture.
Place in the prepared baking dish.
Get our reserved sauce.
Add milk, chili powder and stir.
Pour over the ground beef enchiladas evenly.
Top with remaining shredded cheddar cheese.
Bake for 30 minutes.
Garnish the enchiladas with your choice of chopped tomatoes,
shredded lettuce, salsa, light sour cream, etc.
