1 Cup Flour
3/4 Cup White Sugar
2 Packets Sweet N Low
1 Egg
1 tsp Baking Soda
3/4 tsp Vanilla Extract
1 Can Fruit Cocktail (16 oz)
1/2 Cup Firmly Packed Brown Sugar

Preheat the oven to 350 degrees.
Spray a 9 x 9 baking pan with cooking spray (lightly).
In a mixing bowl, add the flour, sugar, sweet n low, egg,
baking soda, vanilla extract, and fruit cocktail (with juice).
Mix well.
Pour the fruit cake mixture into the baking pan.
Sprinkle the top of the fruit cake with the brown sugar.
Bake for 35 minutes.

This fruit cake recipe is easy, fast, and very good too. I used sweet n low to reduce the sugar content for a healthier dish.
