Cream of Potato Soup Recipe




6 Slices Center Cut Bacon
1 Cup Chopped Onion
4 Cups Cubed Potato
2 (10.75 ounce) Cans Reduced Fat Cream of Chicken Soup
2 1/2 Cups 1 % Milk
Salt
Pepper
1 tsp Dried Dill Weed

In a large saucepan, cook bacon until crisp.
Set aside.
Drain most of the bacon fat, leaving about 1-2 tablespoons in pan.
Brown onions in bacon fat over medium heat.
Add potatoes.
Now add enough water to just cover the potatoes.
Cover and cook until potatoes are tender.
Put the potato soup and milk into a mixing bowl.
Mix well until smooth.
Add this to the potato mixture.
Heat without boiling.
Add salt and pepper to taste.
Stir in dill weed.
Crumble bacon.
Put the potato soup into serving bowls.
Add the bacon to top of soup to garnish.
Serve.
