Best Meat Loaf Recipe
1 Green Bell Pepper
1 Red Bell Pepper
1 Large Onion
1 TBSP Oil
1 TBSP Water
1 Lb Lean Ground Beef
1 Egg
1/2 Cup Bread Crumbs
1/4 Cup Fresh Parsley (chopped fine)
2 Garlic Cloves (minced)
1 TBSP Worcestershire Sauce
2 Zucchini (sliced thin)
1 - 8 Ounce Can of Tomato Sauce
1/4 tsp Salt
1/4 tsp Pepper
Preheat oven to 400 degrees.
Lightly spray a medium size roasting pan with cooking spray.
Thinly slice green pepper, red pepper, and 1/2 of onion.
Put them in the roasting pan.
Add oil and water to roasting pan.
Mix well with the vegetables.
Bake for 15 minutes uncovered.
Combine lean ground beef, egg, bread crumbs, fresh parsley,
garlic cloves, and worcestershire sauce, and remaining onion
(diced fine) in a mixing bowl.
Shape meat mixture into a meat loaf form.
Reduce oven heat to 375.
Take roasting pan out of oven and add zucchini.
Stir.
Move vegetables over to one end of pan.
Put meatloaf on the other end of roasting pan.
Mix the tomato sauce, salt, and pepper in a bowl.
Pour mixture over the top of the meat loaf.
Bake the meat loaf recipe for 30 minutes (uncovered) or until done.
