Bean Burrito Recipe
2 Cups Brown Rice (cooked according to directions)
1 Can Black Bean
1 Can Pinto Bean
1 Can Whole Kernel Corn (drained)
1 Can Diced Tomatoes with Green Chiles
8 Fat Free Flour Tortillas
8 OZ Reduced Fat Shredded Cheese (your choice)
1/2 tsp Garlic Powder
1/2 tsp Dried Cilantro
1/8 tsp Cayenne Pepper
Prepare the rice according to the directions on the package.
Add the garlic powder, cilantro, and cayenne pepper to
the rice.
Mix well.
Set the rice aside.
Place each can of black bean and pinto bean in a strainer.
Rinse.
Place in a large bowl.
Add the corn and diced tomato with green chilies to bean
mixture.
Mix.
Add rice and cheese to bean mixture.
Mix well.
Lay each burrito on the counter.
Put 2 - 3 heaping tablespoons full of the bean mixture onto
each burrito at one end.
Roll each tortilla, starting at the end with the bean mixture,
into burrito form.
Heat and serve.
Great condiments for this recipe are salsa, low fat
sour cream, and guacamole!
