2 Ounces Reduced Fat Swiss Cheese
1 1/2 lbs Salmon (skin removed and bone removed if any)
1/2 Cup Barbeque Sauce
1 1/2 TBSP Olive Oil
2 Garlic Cloves (minced)
Preheat grill.
Cut 8 thin slices of swiss cheese.
Cut salmon into 4 portions.
Lay the salmon flat and butterfly starting from the thickest side.
Slice in half horizontally.
Leave 1/2 inch uncut on each side to hold top and bottom sections together.
Place cheese inside the salmon and fold closed.
Wash hands.
Combine barbecue sauce, olive oil, and garlic in a shallow bowl.
Dip bottom of salmon into barbecue mixture and place on grill.
Spoon remaining mixture over top of salmon.
Close lid and grill 4-5 minutes or until fish flakes easily.
