Baked Potato Skin Recipe


2 Large Potato (sliced keeping skins on)
2 green onions (chopped fine; including tops)
2 TBSP Salsa
2 TBSP Immitation Bacon Bits
1/2 Cup Reduced Fat Sharp Shredded Cheddar Cheese
Butter Flavored Pam Spray
Light Sour Cream

1. Preheat oven to 450 degrees.
2. LIGHTLY Spray both sides of potato slices with Pam spray.
3. Place on a baking stone.*
4. Bake potato in oven for 20 minutes.
5. Mix onion, salsa, bacon bits, and cheese in a small bowl.
6. When potatoes are finished baking, take out of oven.
7. Top with mixture.
8. Place back in oven until cheese is melted (about 4/5 minutes).
9. Top each potato skin with a small amount of sour cream.

*The baking stone will help the potato skin brown evenly.
If you do not have one, place on foil lined pan and turn half way through cooking.
